Tasteworthy Tuesday: Grilled Flank Steak Salad

Calling this dish a salad is sort of a joke.  It's more like an entire steak dinner that just happens to be sitting on top of a bed of mixed salad greens.  I don't actually have any pictures of the final product because we devoured it so quickly.  Boyfriend ate a similar salad at Stout one night and requested that I recreate it for dinner.  The following is less of a recipe and more of just a list of ingredients (without any measurements) and some loose instructions.  It's almost impossible to screw up and deliciously fulfilling.    
  
Grilled Flank Steak Salad 

Ingredients: 

Flank steak (skirt steak would make a delicious substitute)
Blue cheese or Gorgonzola cheese
Fingerling, baby red or baby white potatoes
Red onion
Portabello mushrooms (I used baby bellas) 
Butter
Wine 
Balsamic vinegar 
Olive oil
Mixed salad greens 
Salt and pepper

Instructions: 

Lightly coat flank steak with olive oil and season with salt and pepper.  I prefer to cook the steak in a cast iron grill pan but you can also use your oven's broiler or the actual grill since it's almost grilling weather.  Once cooked to the desired doneness (I prefer medium rare) take off of heat and let steak rest on a cutting board.  Slice steak as pictured above.  To insure that it's as tender as possible always slice flank steak against the grain  

While the steak is grilling add whole potatoes to a pot of boiling water and cook until fork tender.  When the are finished cooking drain the water and (let cool a minute) cut potatoes into quarters.  

Also while steak is cooking, slice mushrooms and saute in butter and a little bit of wine.  Cook for approximately 5 - 8 minutes.  

Now you have almost all of the ingredients prepared.  All that is left to do is to thinly slice the red onion and cut the cheese into small chunks. Assemble all of the ingredients of your salad and dress with a simple vinaigrette made from olive oil, balsamic vinegar, salt, and pepper.  And of course, dive in!

  1. I make steak salads all the time because it's the perfect meal that combines what I love (salad) and what the hubby loves (steak). This looks like a great variety of the one I love to make (which involves roasted red peppers, slices of parm cheese and avocado).

  4. I'm a huge fan of steak salads- they make me feel like I'm being all healthy eating my greens, yet incorporate the meat that the Midwestern in me craves.
